I started ARRL RTTY Round Up only on Sunday morning 00:45 UTC. Stats window shows first QSOs on Saturday 00:00 UTC.

Display is shifted 12 hours left.

Actually, in this case, it's probably shifted 24 hours left (not 12 hrs).

Win-Test doesn't take account of the day of the week, so the first logged Q is always considered as a "first day" QSO. It's also the reason why you can enter QSO at any day of the week and if will be displayed (when you're testing your setup on Friday night for example...).

I understand it might be confusing, but unfortunately, it is how it works.
